Duties

Independently directs the operations of all stewarding operations, as well as supervising all operations of a full service employee cafeteria. Works primarily in all kitchen areas, providing detailed directions and instructions on cleaning and sanitation of all service ware, equipment and surfaces, as well as serving guests of the employee cafeteria. Work is assigned by guest and employee demand, and seasonal business fluctuations. Write sanitation and service procedures as well as SOP's on the daily operations of assigned outlets. Responsible for planning, organizing, scheduling, and supervising work assignments for approximately 25-30 subordinate food service workers. Provides instructions for any special functions or unanticipated needs. Coordinates activity with sous chefs and the Executive Chef to insure adequate support for special functions being planned and in progress. Supervises and ensures proper sanitation and storage of all china, glass, silver, buffet equipment, and small wares. Sets up kitchen for banqueted events including but not limited to plates, buffet items, buffet tables, and specialty items as needed. Performs other duties as assigned.

Requirements

• Satisfactorily complete an employment verification (E-Verify) check.
• Subject to satisfactory completion of all pre-employment checks in accordance with AR 215-3, para.2; to include a Child Care Tier 1 background investigation; may include a medical examination
• Incumbent is required to complete a Tier 1 background investigation for a Common Access Card for physical access to federally-controlled facilities,
• Ability to work an irregular schedule which may include nights, weekends, holidays, and split-shifts.
• May require lifting and carrying supplies that weighs up to 25 pounds.
• The ability to obtain (within first six months of employment) and maintain a Food Protection Manager Certification-
• acquired through an American National Standards Institute(ANSI) accredited agency is required (i.e., ServSafe Food Protection Manager Certification Program).

Qualifications

Minimum Requirements: Work experience directly related to the duties described above in the operation of an industrial food service function such as a cafeteria. Position requires use of personal computer and ability to operate Microsoft Outlook, Word and Excel.
