Duties
Works under the direct supervision of the Food and Beverage Director.
Responsible for the management, supervision and service of all meetings, banquets, and catered functions in conjunction with the goals and tasks set forth for the Catering Department for an Armed Forces Recreation Center (AFRC) hotel.
Directs and supervises catering staff in service standards and policies. Forecast staffing needs and payroll costs; schedules staff in order to maximize profits consistent with quality service.
Maintains proper labor percentages within budgeted guidelines. Directs staff in setting up of attractive, creative, and imaginative buffet tables and displays. Supervises their work to ensure professional performance.
Ensures security, maintenance and inventory of all catering and meeting equipment. Maintains regular daily contact with the kitchen relating to presentation, timing and general review of all catered functions.
Requirements

- Work hours may involve weekend, weekdays, holidays and night duty.

- The ability to obtain (within first six months of employment) and maintain a Food Protection Manager Certification.
- Acquired through an American National Standards Institute (ANSI) accredited agency is required (i.e., ServSafe Food Protection Manager Certification Program).

Minimum Qualifications:
Progressively responsible experience in catering and at least one year specialized experience at the next lower level.
Supervisory experience is also required. Must be well-organized and be attentive to detail.
Must possess ability to communicate clearly both orally and in writing.
