Duties
Monitors, directs, and administers policies, programs, and goals, for MCCS Food and Hospitality operations, to include full-service dining, theme facilities, nightclubs, lounge bars, catering, snack bars, mobile units, recreational lodging facilities, and food concessionaire operations on both Marine Corps Air Station Beaufort, Marine Corps Recruit Depot Parris Island and the Laurel Bay housing area. Responsible for coordinating the efforts of food service managers and for providing overall management of all phases of food operation from initial determination of menus to its final prepared, consumable state. Oversees the purchasing of food items and supplies. Provides overall management of internal processing of invoices, requisitions, transfers, inventory reconciliation, labor cost analysis and financial viability determinations. May provide food service support for festivals, recreational tournaments and for official functions of visiting dignitaries. Serves as technical advisor on the establishment of contract food service facilities, direct and indirect operating standards, inspecting and ensuring technical contract compliance

Qualifications
Five years experience that demonstrates executive management skills involving planning, coordinating, and directing diversified food service and lodging operations, four (4) years being at a supervisory level. Successful completion of a full four (4) year course of study in any field leading to a bachelors degree from an accredited college or university and/or culinary certification and/or a Senior Food leadership Course (or equivalent) is required. A thorough knowledge of business practices, economic principles, and ability to analyze trends and make improvements. Must demonstrate the ability to deal effectively with superiors, subordinates, vendors, and the public. Must have oral and written communication skills, and ability to evaluate, negotiate and determine potentially successful vendors. This is a white-collar position where occasional lifting up to 20 lbs may be required.
