Duties
Under direction of the MCCS Director, monitors, directs, and administers policies, programs, and goals, for MCCS Food and Hospitality operations, including full-service dining and other facilities, nightclubs, lounge bars, catering, snack bars, mobile units, temporary lodging facilities (TLF), and food concessionaire operations. Responsible for coordinating the efforts of food service managers and for providing overall management of all phases of food operation from initial determination of menus to its final prepared, consumable state. Oversees the purchasing of food items and supplies. Provides overall management of internal processing of invoices, requisitions, transfers, inventory reconciliation, labor cost analysis and financial viability determinations. May provide food service support for festivals, recreational tournaments and for official functions of visiting dignitaries. Serves as technical advisor on the establishment of contract food service facilities, direct and indirect operating standards, inspecting and ensuring technical contract compliance. Scope of Food & Hospitality operations, limited to direct food, beverage, and special event sales and revenue from TLF ranges up to $5,500,000 annually.

Qualifications
Four years experience that demonstrates executive management skills involving planning, coordinating, and directing diversified food service and lodging operations. A thorough knowledge of business practices, economic principles and ability to analyze trends and make improvements. Must demonstrate the ability to deal effectively with superiors, subordinates, vendors, and the public. Ability to evaluate, negotiate, and screen and select potentially successful vendors. This is a white-collar position where occasional lifting up to 20 lbs may be required.
