Duties
MAJOR DUTIES:
Serves as the Director, Food and Beverage (F&B) working under the general supervision of the General Manager (GM).
Leads and supervises the entire Food and Beverage (F&B) department comprising of 80 employees within the Resort.
Manages day to day F&B operations and F&B support to include special events to achieve high levels of quality, productivity and department profitability.
Formulates and institutes instructions and directives necessary to conduct service orientated and cost effective operations
Reviews guest comments, surveys and operations to identify problems and applies appropriate corrective action.
Responsible for the success of Food and Beverage programs based on financial results, customer satisfaction and market desires.
Reviews financial reports and operating metrics including productivity and major cost centers, develops and executes annual operating budgets, tracks revenues, labor and other expenses; presents analysis to GM and Executive Committee (ExCom), and modifies operations to meet established objectives
Guides and assists subordinate staffs in developing and implementing operating policies, programs and procedures within the F&B department.
Develops and approves employee work schedules, and modifies as necessary to address fluctuations in demand.
Evaluates operating reports to identify and correct problems.
Conducts regular department inspections, reviews and resolves guest complaints.
Formulates/approves employee development and training programs.
Establishes training requirements, ensures skill level training is developed, conducted and evaluated on an ongoing basis.
Institutes appropriate policies and procedures to ensure adequate internal controls, inventory management, cash management and accountability for property and funds.
Performs a full range of supervisory duties including developing, evaluating and obtaining approval for staffing levels. Initiates recruitment or reassignment actions; makes/approves selections.
Approves performance appraisals conducted by subordinate managers.
Insures active support of diversity and equal opportunity programs.
Initiates or serves as deciding official on disciplinary actions, recommends awards and pay adjustments.
Participates as member of the ExCom reporting directly to the GM.Applies HQDA Occupational Safety & Health objectives and initiatives, and implements safety plan that outlines the policies and procedures regarding employee safety and health in the workplace.
Ensures completion of annual mandatory occupational safety and health training.

Qualifications
QUALIFICATIONS MUST BE CLEARLY VERIFIABLE IN YOUR RESUME. GOVERNMENT POSITIONS MUST INCLUDE PAY PLAN, SERIES, GRADE, TO AND FROM DATES, AND GOVERNMENT AGENCY/DEPARTMENT. All qualification requirements must include experience performing duties equivalent in scope and complexity to the next lower grade level.
Incumbent must have at least five (5) years of experience in managing and supervising at least three food and beverage functional areas, such as: buffet restaurants, a la carte restaurants, catering, quick serve outlets, bars and kitchen operations, as well as management experience that demonstrates knowledge and successful execution of F&B internal controls, cost controls and menu engineering.
In addition, experience in the use of automated POS, inventory control systems and in facilitating the professional development of subordinate managers and staff is required.
