This position is located at Whiteriver, AZ in the Whiteriver Indian Hospital within the Dietary Services department. The purpose of this position is to provide quality food service to patients, employees, and guest through food preparation, service and sanitation. Hours of duty are on a rotating schedule that includes holiday and weekend shifts. Such work assignments will involve being scheduled on emergency basis as needed.
Duties
Cook independently prepares regular and modified/special diet foods and meals for patients, employees and guest of the hospital.
Cook uses a full range of quantity and individual cooking procedures from standard recipes to new and complex meals and special feeding.
Prepares fruits and vegetables by cleaning, peeling and cutting. Roast broils, bakes, fries, steams and cooks meats, fish, poultry and fruits and vegetables.
Prepares and cooks sauces, gravies, soups, stews, casseroles and various baked products such as, breads, biscuits, cakes and pies.
Works alone or with other food service personnel in performing routine and special cleaning duties such as; sweeping and mopping floors, cleaning tables, food carts, windows, freezers and refrigerators.
Uses established policies and procedures, maintains a sanitary and safe working environment.
Qualifications

BASIC QUALIFICATIONS: No specific length of experience is required. Applicants will be rated based on their responses to the assessment questions included in this vacancy announcement and the information contained in their resume. This job has a screen-out element which will be used to determine minimum eligibility for this job. Applicants who do not meet the screen-out element will be found ineligible.
SCREEN OUT ELEMENT: Ability to do the work of a Cook without more than normal supervision: experience and/or training to perform the full range of duties of a Cook on own initiative subject to only intermittent supervision.
ADDITIONAL QUALIFICATIONS: Experience and/or training that included performing cook duties including preparing all types of meats, poultry, seafood, vegetables, fruits, sauces, and gravies; monitoring temperature and steam pressure; evaluating the condition of food being cooked at frequent intervals to prevent uneven cooking and drying out; modifying recipes for ingredient quantities, number of servings, and the size of the equipment available; planning, preparing and coordinating entire meals so that completed food products are ready at the appropriate temperature and time; preparing food for modified diets such as diabetic, sodium restricted, and low cholesterol; & reviewing menus and standardized recipes to assure that food items are made correctly.
Time In Grade
Federal employees in the competitive service are also subject to the Time-In-Grade Requirements: Merit Promotion (status) candidates must have completed one year of service at the next lower grade level. Time-In-Grade provisions do not apply under the Excepted Service Examining Plan (ESEP).
