About the Position: This position is located in the Nutrition Care department at Brooke Army Medical Center, Fort Sam Houston, in San Antonio Texas.

Duties

Prepare a full range of baked products found in regular and special diet menus. Adjust measurements and revise recipes to improve taste, change quantities, or conform to special diet requirements. Calculate daily totals of various ingredients required by bakery for the days production. Use bakery tools and equipment, including powered machines, abiding by health regulations and sanitation standards. Maintain knowledge of the full variety of ingredients used in baked goods; e.g., hard or soft flour, leavening agents, soda, butter or shortening, hard or soft mineral water. Maintain cleanliness and orderliness of bakery by cleaning and washing of ovens, work tables, equipment, refrigerators, utensils, and floors.

Requirements

• Appointment may be subject to a suitability or fitness determination, as determined by a completed background investigation.
• A Personnel Security Investigation is required.
• Selectees will be required to sign a statement (Condition of Employment) consenting to seasonal influenza vaccinations or must provide a recognized exemption.
• A pre-placement medical examination is required.
• Immunization screening is required. Hepatitis B immunization is required for all positions with direct patient contact. Applicants may be required to show proof of other immunizations depending on the type of position.
• This position may include shift work (evenings, weekends, holidays).
• This position may require the incumbent to work during irregular work hours which may include evenings, weekends, holidays, and/or varying work schedules.
• Moderate to heavy lifting up to 75 pounds is required.

Can adjust measurements and revise recipes to change quantities. Familiar with oven timing and temperature control. Can maintain cleanliness and orderliness of bakery by cleaning and washing ovens, work tables, equipment, refrigerators, utensils, and floors. - Failure to meet this Screen out Element will result in an ineligible rating.
