About the position: This position will be assigned to CLUB MUROC located on Edwards AFB, CA. Responsible for all food operation at Club Muroc.

Duties

Responsible for all food operations at Club Muroc. Responsible for planning and managing all food activities in the club. Using culinary skills, performs as a working chef in the day-to-day operation of the kitchen and all aspects of meal preparation. Establishes procedures, lead times on orders, and portion controls; makes adjustments as necessary to increase efficiency. Instructs all cooks and food service workers on proper techniques and methods of cooking and preparing a variety of food items in the art of fine culinary cuisine. Prepares and/or oversees the preparation of meals which involve both simple to complex preparation methods. Checks food during and after preparation for conformance with high standards of quality, cooking size portions and garnishing of food. Ensures that kitchen is provided with nutritious, safe, eye-appealing, properly flavored food. Initiates the preparation and development of new and unusual food items, specialty foods, and sauces. Creates and plans new culinary menu items and recipes to support the interest of customers. Researches product for best quality and pricing. Plans and develops all menus for regular meals, fine dining and parties. Formulates cyclic meal specials and menus for use in all food areas to ensure customer satisfaction. Interviews potential employees. Establishes work schedules; assigns work to subordinates; approves/disapproves leave requests; prepares employee performance evaluations; maintains discipline and takes appropriate disciplinary action when needed; hears and resolves complaints. Recommends promotion/reassignment/separation of subordinates. Responsible for ensuring kitchen staff is trained. Assigns tasks; monitors methods of food preparation and ensures food is prepared in conformance with a high standard of quality. Requisitions food supplies through Club Manager. Conducts walk through safety, food storage and sanitation inspections, taking any necessary corrective actions. Performs daily sanitation checks. Assists in pricing, ordering, and conducting inventory when necessary. Performs other related duties as assigned. May be required to work an uncommon tour of duty to include days, nights, weekends, family days, and holidays. Requirements

  • This position requires the incumbent to complete a background investigation with favorable results.
  • Must complete a pre-employment physical.
  • Must be able to work shift work, including weekends, holidays, down days and evenings.
  • Must have or obtain a Food Manager Certification within 90 days of hire.
  • Must be able to read, write, and speak English.

Experience refers to paid and unpaid experience, including volunteer work done through National Service programs (e.g., Peace Corps, AmeriCorps) and other organizations (e.g., professional; philanthropic; religious; spiritual; community; student; social). You will receive credit for all qualifying experience, including volunteer experience. Your resume must clearly describe your relevant experience; if the position allows for qualifying based on education, your transcripts will be required as part of your application. Qualifying Experience: Must have progressively responsible experience in quantity cooking, preparation of a variety of food items, menu planning, quality of food preparation, and storage procedures for food supplies and equipment. The experience must include supervising personnel. In addition, the incumbent must have knowledge of dietetics, food allergies, planning culinary activities, and portion control. Must have the ability to plan culinary activities to meet meal schedules. Must have specialized experience which involved planning, preparing and serving food in mass quantities for large groups of people. Knowledge of etiquette and military protocol desirable. Education: Must hold a culinary certification from a nationally accredited program. Must have or be able to obtain a ServSafe Food Manager Certification within 90 days of in-processing. Other Qualifications: Must be able to continually stand and walk, frequent stooping, reaching, pulling, pushing and bending. Frequently lifts and moves objects weighing up to 40 pounds unassisted, and occasionally lifts or moves objects weighing over 40 pounds with assistance. Must be able to read, write, and speak English. Conditions of Employment: Must be able to satisfactorily complete a pre-employment physical within 60 days of in-processing. Must have or obtain a Food Manager Certification within 90 days of in-processing. Must satisfactorily complete a Tier 1 background check. You will be evaluated on the basis of your level of competency in the following areas:

Education

Some federal jobs allow you to substitute your education for the required experience in order to qualify. This position does not allow for education substitution.

FOREIGN EDUCATION: Education completed in foreign colleges or universities may be used to meet the requirements. You must show proof the education credentials have been deemed to be at least equivalent to that gained in conventional U.S. education program.
