This TERM position is located at the Phoenix Area Regional Treatment Center in Sacaton, Arizona. The cook is responsible for performing a wide variety of food services and cooking functions including food preparation, sanitation, and service duties. The cook performs tasks involving several steps, and routinely follows established patterns of work. The cook prepares items for regular and modified diets and identifies foods to be served on commonly prescribed diets.
Duties
Sets up and serves cafeteria lines and tray lines with hot and cold food items including breakfast items, entrees, vegetables, soups, sauces, salads, desserts, breads, hot and cold beverages, and condiments. Portions food items into standard serving sizes using proper utensils and containers, following established regular and modified diet menus. Reads and understands diet cards, menus, and serves appropriate food items for modified diets.
Makes final check of assembled trays and nourishments prepared by lower grade food service workers. Refers diet and/or meal questions from the patient to the diet technicians.
Assembles, weighs or measures ingredients and prepares food items such as eggs, breakfast meats, cooked cereals, sandwiches, grill items, broiled meats, vegetables, soups, sauces, gravies, pureed foods, salads, fruit cups, gelatins, convenience foods, and hot and cold beverages.
Assembles and prepares patient nourishments, desserts, modified diet items, meat, fish and poultry. Stores food and supplies in accordance with established policies and procedures. As assigned, may order, receive, and store food and supplies. Operates a variety of powered and mechanical equipment such as mixers, steamers, ovens, fryers, coffee brewers, grills, ranges, dish machines, freezers, refrigerators, knives and scales.
Transports soiled dishes to the dish room after meals. Cleans, sanitizes, and stores dishes, trays and silverware by setting up dishwashing area, filling dish machine tanks, maintaining dish machine water and detergent levels, loading, unloading, stacking, and storing dishes and silverware and cleaning dish machine inside and out.
Monitors and records dish machine temperatures.
Qualifications

You will receive credit for all qualifying experience, including volunteer and part time experience. You must clearly identify the duties and responsibilities in each position held and the total number of hours per week.

Ability to do the Work Without More than Normal Supervision: experience and/or training to perform most duties of the Cook, including quantity cooking, on own initiative subject to only intermittent supervision.
Technical Practices: this pertains to the knowledge of preparing and serving food for consumption.

Time In Grade
Federal employees in the competitive service are also subject to the Time-In-Grade Requirements: Merit Promotion (status) candidates must have completed one year of service at the next lower grade level. Time-In-Grade provisions do not apply under the Excepted Service Examining Plan (ESEP).
