This position is in the Nutrition and Food Service of a Veteran Affairs Medical Center. Nutrition and Food Services is responsible for providing meals and nutritional care to Veteran patients at the Medical Center. The primary purpose of the Cook, WG- 6, is to prepare nutritious, high-quality meals for service to the Veterans.
Duties
Duties:
Works independently to prepare and cook a variety of items including regular and therapeutic diet (diabetic, low sodium, low protein, gluten free, etc.) entrees and dessert items.
Weighs, measures, and assembles ingredients for regular and modified diets.
Cleans and sanitizes work areas and performs deep cleaning tasks when needed.
Makes precise measurements and weights in in preparing recipes and portioning food.
Uses a variety of methods to prepare meats, fish, and poultry including broiling, roasting, baking, frying, boiling, steaming, stewing, braising, and grilling.
Slices meat items by hand confirming to specific size requirements or weight specifications.
Prepares fresh, canned, and frozen vegetables; bakes frozen potatoes, pre-made cookie dough, muffin batters.
Prepares and heats convenience items; prepares pureed foods and adjusts consistency with thickeners.
Washes, peels and cuts fruits and vegetables by hand or machine. Assembles and mixes salad ingredients and dessert items including gelatin molds and fruit crisps.
Work Schedule: Rotating shifts.

Physical Requirements:: The position requires continuous standing and walking, and frequent stooping, reaching, pushing, pulling, and bending. May be required to perform heavy work, such as scouring, and scrubbing large size cooking utensils and pushing heavy carts and trucks in unloading, storing and delivery supplies. May also be required to work on ladders and use powered cleaning equipment. Incumbent is required to push AMDS food cart which weighs approximately 500 pounds and will require 12-pounds of force to initiate movement and 7-pounds of constant force to keep the food cart rolling. Work is performed in kitchen areas which are frequently hot and noisy. They are often exposed to steam, fumes, cooking odors and to extreme temperature changes, i.e., entering walk-in refrigerators or freezers. There is danger of possible knife cuts, steam burns and burns from hot food, grills, ranges, hot grease, and water.
