Duties
Lead Food Service Workers and other Cooks to ensure menu items are prepared and served timely.
As a principal shift cook, prepares a full variety of meals using many recipes. Cook from scratch including ethnic, vegetarian, home style meals, current food trends, and regular and special diet entrees and dessert items.
Cut, roast, broil, bake, fry, boil, steam, and stew meats, poultry, and seafood; prepare soups, stocks, broths, gravies, sauces, and puddings; bake desserts, yeast breads, and quick breads.
Use food preparation tools and maintain specialized equipment such as commercial meat slicer, commercial grill, oven, deep fat fryer, commercial steamers, tilting skillet, and steam line.
Perform administrative duties to include inventories, establishing menus, developing work schedules, and preparing list of needed supplies.
Requirements

Qualifications
Screen-out Element: Ability to do the work of the position without more than normal supervision as shown by having cooked from scratch in a restaurant or other professional establishment for more than 50 people.
OPM Job Qualifications System for Trades and Labor Occupations will be used in determining your qualifications. There is no specific length of training or experience required; however, you must be able to demonstrate through experience shown in the resume materials, that you possess the skill level that has equipped you with the particular job elements to successfully perform the duties of Cook without more than normal supervision.

Physical Demands: Must be able to lift and carry up to 50 pounds. Work requires continual standing, walking, stooping, reaching, pushing, pulling, and bending. Coordination and dexterity are required in the operation of food service equipment. Must be able to work long hours under stressful conditions for weeks at a time, depending on fire activity.
Work Environment: Work is performed in and around the dining facility. May be assigned to work at remote dining halls or primitive field camps with limited living facilities. Is regularly exposed to a broad spectrum of temperature extremes i.e., the uncomfortably high temperatures and humidity of the steam and heat from cooking equipment; to the extreme cold temperatures when entering walk-in refrigerators or freezing units. Injuries may occur from sharp tools and equipment, hot appliances, chemicals, steam, and slippery floors. Subject to prolonged periods of standing. Must abide by personal hygiene standards and safe work procedures such as wearing a hairnet or hat and a clean uniform daily.
