This position will be located in Mulligans at the Casa Linda Oak's Golf Course which are part of the Morale, Welfare and Recreation Department aboard Naval Air Station, Jacksonville, Florida. Duties

This position performs a full range of preparing and cooking items using standard or complex recipes. Incumbent uses a full range of cooking procedures from common frequently used to difficult or new recipes, in the independent preparation of a variety of meats, poultry, seafood, vegetables, sauces and gravies. On a daily basis prepares four or more menu items for one meal that involves planning and coordinating a variety of steps. Ensures that all items are ready for serving at the same time or prepares menu items using special or difficult recipes involving many steps, ingredients, or long preparation time. Adjusts recipes to improve flavor, texture and presentation. Responsible for relaying instructions from Food and Beverage Manager to other kitchen crew members. Demonstrates work methods and provides work-related guidance to lower graded employees. Checks on the work in progress of other kitchen crew members to meet productivity and timeliness goals. Ensures others follow security, safety, sanitation, and housekeeping rules. Responsive for proper storage, refrigeration and labeling of food in accordance with sanitation regulations at all times. Responsible for ensuring the kitchen area, equipment and food preparation areas are cleaned and maintained in accordance with sanitation regulations at all times. May conducts on the job training and instruction to lower-level employees. Checks with supervisor on problems. May assist in purchasing and menu pricing decisions by performing yield tests for selected food, ordering items in accordance with daily and weekly menu requirements and preparing food production worksheets from computerized recipe files. Performs supervisory duties on short term basis in absence of Food and Beverage Manager. Performs other duties as assigned.

Requirements

  • Must meet Federal Employment suitability requirements and successful completion of background investigation. Background investigations are conducted using fingerprint identification and completion of background inquiry forms.
  • Must successfully pass the E-verify employment verification check. Any discrepancies must be resolved as a condition of employment.

  • Must reside within 50 miles of 32212 at time of applying.
  • Must be able to frequently lift up to 40 lbs.

Qualifying experience must have been equivalent to the next lower level in the normal line of progression. Specialized experience must demonstrate the following: Thorough knowledge of the full range of food preparation principles, including the techniques and procedures necessary to develop new or recurrent recipes. Knowledge of procedures of cooking in large quantities. Skill to overcome practical production problems; evaluate final food products and initiate corrective action. Ability to expand and modify recipes and to develop standardized recipes for quantity cooking. Skill in the operation, breakdown and proper cleaning of food service equipment. Knowledge of sanitation requirements and kitchen safety regulations is necessary to ensure a safe and healthy environment. Ability to coordinate the work of lower graded employees. This position requires continual standing, bending, reaching, pushing and pulling in different directions. Will be required to frequently lift up to 40 lbs. and may be required to lift over 40 lbs on occasion with the assistance from other kitchen staff or hand devices. Most kitchen environments are warm and noisy, and the incumbent will be exposed to steam, heat, cold, fumes, and odors, dangers of falling, burns and cuts. All employees are required to wear kitchen safety protection when completing certain jobs. CPR/1st Aid Required but can be obtained within 60 days after hired. You will receive credit for all qualifying experience, including volunteer and part time experience. You must clearly identify the duties and responsibilities in each position held and the total number of hours per week. Experience refers to paid and unpaid experience, including volunteer work done through National Service programs (e.g., professional, philanthropic, religious, spiritual, community, student, social).
