The Food Service Worker Supervisor serves as direct supervisory official and has overall responsibility for the direction and coordination of work function and activities in all food preparation and food service areas. The position is located in the Department of Veterans Affairs at the VA San Diego Medical Center, La Jolla in the Nutrition and Food Service Department.
Duties
Major duties are below but not limited to:
Serves as direct supervisory official and has overall responsibility for the direction and coordination of work function and activities in all food preparation and food service areas.
Prepares and cook a variety of menu items; adjust standardized recipes for the number of servings required in large quantity cooking; and maintain the proper temperature for all foods during holding, transport, reheating, and serving to assure quality control and food safety.
Performs yield testing for selected food items to determine the serving weight or volume after preparation and gather other test data to assist management in making purchasing and menu pricing decisions.
Retrieves computerized information/printouts to assist with tray and/or nourishment assembly such as standing orders, nourishment labels, tabulated recipe lists, and other simple information to assist in meal delivery.
Utilizes food production reports from the computer to prepare production worksheets for cooks and Ingredient Control.
Assures that all production schedules (worksheets) reflect the totals for each category of meal.
makes necessary adjustments to production schedules (worksheets) when emergencies arise.
Perform other duties as assigned.

Physical Requirements: Applicants must be physically able to perform work requiring light to moderate physical effort. They are subject to continuous standing and walking, and frequent stooping, reaching, pushing, pulling, and bending.
