Serves as Food Service Worker (Salads & Desserts) for Nutrition & Food Service which involves production for multiple serving units including an advanced tray delivery system, bulk service re-thermalization system and a cafeteria line with 50% or more of patients requiring modified diets.
Duties
Responsible for preparing multiple complex refrigerated items for salad and dessert area on a daily basis.
Performs duties requiring proficiency in special procedures and a broad knowledge of service operations such as food preparation.
Maintains proper temperatures of food according to established procedures.
Sets up salads and dessert assembly area with correct supplies and food items.
Breaks down and cleans the assigned work area to meet ServSafe standards.
Prepares dishes by washing, peeling, chopping, pairing, cutting, slicing, dicing, pureeing, a variety of food items.
Uses measuring devices to ensure proper portion control is met and following the menu.
Has a thorough knowledge of common modified diets used at this medical center.
Observes safety procedures, universal precautions and HACCP requirements in the preparation and service of food and equipment maintenance. Is clean and neat, follows the rules for good personal hygiene, and observes approved dress code for service.
Is responsible for meeting short deadlines for meal service.
Follows instructions and established safety practices in operating all equipment.
Is responsible for preventing damage to equipment and injury to self and others.
Responsible to train other salad personnel to follow appropriate procedures including new salad and dessert methods.
Prepares a pull sheet to ensure the correct amount of ingredients are on hand to meet needs based on patient census, standing orders, meal preferences, and diet orders.
Reports overages and shortages to supervisor.
Assists with on-the-job training of equal or lower grade workers.
Knows how to use current diet handbook to answer simple questions about diets and procedures.
Performs other duties as assigned.
Work Schedule: 5:30 am - 2:00 pm Rotating Days

Physical Requirements: Lifts or moves objects weighing up to 40 pounds on one's own, and occasionally lifts or moves objects weighing more than 40 pounds with the aid of a lifting device or other workers. They use light to moderate physical effort. The position consists of constant standing, walking, frequent bending, reaching, pushing, and pulling.
